Creamy Broccoli Tuna Pasta

Normally I am a chicken fan, but I make an exception with this meal. Kevin and I loved this meal when we were dating, so I set out to make it from scratch. We loved how it turned out. Surprisingly, the kids like it too.
Creamy Broccoli Tuna Pasta
12 Tablespoons real Butter
9 Tbsp flour
2 cans of Chicken Broth (14.5 oz each)
1 cup milk
1 1/2 teaspoons Parsley (dried)
A little extra fresh parsley (optional)
1 1/2 tsp salt
3/4 tsp pepper
1 box of Rotini Pasta (cooked and drained)
Broccoli, cooked yet firm
2 cans of Tuna, drained
Real Parmesan Cheese
Preheat the oven to 350. Cook and drain the pasta noodles. Meanwhile, in a sauce pan, melt the butter over medium heat.
Slowly add the flour and stir well. Cook the butter and flour for a few minutes as it bubbles and then slowly add the chicken broth and milk. Cook over medium heat, stirring occasionally, until the mixture starts to boil and thicken.
Sprinkle in the Parsley and Salt and Pepper. Cook the broccoli so that it is mostly cooked. I had a microwave bag and did it for 6 minutes.
Add the broccoli to the sauce and stir well. Add in the broccoli juice that is in the bag. If you are making the broccoli in a bowl or on the stove, add in a spoonful of the juice. You can chop the broccoli smaller if you desire. Drain the tuna and add to the sauce as well.
In a large baking dish, combine the cooked and drained pasta with the sauce.
Sprinkle real Parmesan Cheese on top.
Cover with foil and bake for 20 minutes at 350. If you aren’t a fan of tuna you can always substitute with cooked (and seasoned) chicken.

Half Recipe

6 Tablespoons real Butter
4 1/2 Tbsp flour
1 can of Chicken Broth (14.5 oz)
1/2 cup milk
3/4 teaspoon Parsley
3/4 tsp salt and 1/4 tsp pepper
1/2 box of Rotini Pasta (cooked and drained)
Broccoli (cooked but still firm)
can of Tuna, drained
Real Parmesan Cheese (optional)
Preheat the oven to 350. Cook and drain the pasta noodles. Meanwhile, in a sauce pan, melt the butter over medium heat. Slowly add the flour and stir well. Cook the butter and flour for a few minutes as it bubbles and then slowly add the chicken broth and milk. Cook over medium heat, stirring occasionally, until the mixture starts to boil and thicken. Sprinkle in the Parsley and Salt and Pepper to taste. Cook the broccoli and add the broccoli and one spoonful of the broccoli juice to the sauce and stir well. Drain the tuna and add to the sauce as well.
In a large baking dish, combine the cooked and drained pasta with the sauce. Sprinkle real Parmesan Cheese on top. Cover with foil and bake for 20 minutes.
If you aren’t a fan of tuna you can always substitute with cooked (and seasoned with garlic and onion salt) chicken.
