I got this recipe from my mother a few years back. It works perfectly for us so I’ve never had to look for another one. My oldest 2 kids make it the most, so much that they’ve memorized it. We love these waffles.
Oh Boy Waffles
2 1/2 Cups Flour
3/4 teaspoon salt
4 teaspoons Baking Powder
1 1/2 Tablespoons Sugar
2 beaten eggs
2 1/4 Cups Milk
3/4 cup oil (or melted shortening)
Start up your waffle maker to preheat. Combine the dry ingredients in a large bowl. Add the eggs, milk, and oil and beat until smooth. This batch makes enough to feed a family of 8 with left overs, and my kids EAT waffles.
(We use Aluminum Free Baking Powder. We’ve had some experience with bitterness when using the kind that has Aluminum in it. Ever since we switched we haven’t had a problem with it)
Pour on your favorite syrup or serve with fresh berries and whip cream.
