I’ve tried several pancake recipes throughout the years. They were okay, but they weren’t worth keeping. My friend Jenn gave me this recipe several years ago and I haven’t bothered with another pancake recipe since. We’ve only modified it a little. We hope you enjoy.
Jenn’s Secret Pancake Recipe
4 Cups Flour
3 Cups Milk
6 Tbsp Sugar
1/2 cup Oil
5 teaspoons Baking Powder
1/2 teaspoon salt
Warm your griddle over medium heat. Blend the ingredients in a large bowl until smooth. The batter can be slightly lumpy. Once the pan is warm, coat the pan with a little butter to prevent sticking. Use 1/3 cup to pour each pancake out. Cook for several minutes until the bubbles stop sinking in and hold their shape. Flip and cook a few more minutes on the other side. We use a wisk but you can use beaters if you want.
These bubbles are holding their shape and are not sinking in. It is time to flip.
Golden Brown and Delicious.
Our other favorites are to put juiced Strawberries (Strawberry and Granulated sugar mixed together and stir occasionally) with the syrup or with Whip Cream. After the pancakes are cooked, you can also spread butter on top and sprinkle a cinnamon/sugar mixture on top. They melt in your mouth.
This recipe makes enough for our large family.
